Last week I stopped by Tony Coturri in Sonoma and we tasted (the new vintages are beautiful) and talked about the current state of natural and goût de souris—the retronasal smell (that is a taste), the scourge of the current wine world, the downfall of natural, the fraud foisted upon new wine drinkers as something delicious because it’s natural. I think about this stuff all the time but he brought to it another angle on mouse; the new and the old.
